“Cheesy” Spinach Soup

This recipe came from trying to get in my greens in a new way.

I had a huge bag of spinach and I was sick of just eating it with other veggies.

Enter SOUP!

Broccoli Cheese or “cheddar” soup is pretty popular, but what about cheese and spinach? And get this, there’s actually ZERO cheese in this recipe. It just tastes like it!

To make it a little more prep friendly, I used yeast flakes. I’ve used these in the past. You can find them at most local health food stores nowadays, but I find mine at Wegmans. They taste like little cheesy flakes. You can sprinkle them on top of things for a cheese flavor or cook right into your recipes. Works perfectly.

1 cup of this soup is only 52 calories, major win.

Here’s what you’ll need:

  • 3 cups frozen spinach, thawed
  • 22 oz water
  • 1 cube vegetable bouillon
  • 12 oz unsweetened almond milk
  • 8 oz organic vanilla soy milk (you can use all almond milk, I just wanted to thicken it some)
  • 1/4 cup organic coconut flour
  • 2 teaspoons xantham gum
  • 3 Tablespoons nutritional yeast flakes

Makes 7.25 servings

Start by placing the water in a large pot, bring to a boil and add the bouillon cube. If you don’t have this, you can substitute the water and cube for vegetable or chicken stock.

Bring down to medium heat, add the spinach and stir.

In a separate mixing bowl, mix the coconut flour, almond and soy milk, xantham gum, and yeast flakes. Combine all of it and add to the spinach broth. Bring to a boil for 2 minutes, then reduce the heat to a simmer. Cover and let simmer for 5-8 minutes.

Now I decided to puree mine in a Vitamix for a smooth texture. You can also leave it “chunky”, but I prefer it smooth.

I topped mine with some yeast flakes! Since I’m on prep, I didn’t add anything else to the top, but I imagine it would be great topped with a little greek yogurt or greek sour cream. Mmmmm 😛

Don’t let the color scare you, this soup is cheesy, creamy, and delicious. It’s also very nutrient dense 🙂 Get in those greens!
