Chia Apple Butter

Apples! Like I’ve said the past few days, I am eating apples NONSTOP! I have 2 a day. I am definitely on a kick. A few months ago I hadn’t touched an apple in a few months. I like them, but wasn’t in the mood. Now my apartment is pretty much an orchard.

Well my favorites are pink lady apples and honey crisp. The pink lady apples I bought were perfect, the honey crisp not so much. I also wanted to change things up so I bought granny smith and golden delicious. Both were okay, but not super sweet. So disappointing! Especially when you make the extra effort to buy organic and pay more.

So what does one do with all these apples? Make apple butter of course!

This apple butter I decided to add chia seeds for an extra health benefit. Chia seeds are rich in omega 3’s, are loaded with fiber and protein, and have healthy fats too 🙂

So throw some in that apple butter!

For this recipe you will need:

-6 to 8 apples, peeled, cored, and chopped
-1 cup of Stevia in the raw
-1 Tablespoon of cinnamon
-1/4 cup of chia seeds
-1/4 tsp of salt

THAT’S IT!

I use my slow cooker for this, and it makes it so simple!

I also picked up some of these at the store the other day. They are bags for the slow cooker so you don’t have to scrub it like crazy to get it clean. Genius!

Gather your apples, I used a variety

Peel them

Core them (best thing I ever bought was this gadget)

Chop them

Now throw them in the slow cooker!

In a bowl mix together the stevia, cinnamon, chia seeds, and salt. If you like nutmeg you can also do that, but I hate the taste of it!

Now add to your slow cooker and mix thoroughly

Turn the slow cooker on high and cook for an hour. After an hour stir, then turn it on low heat overnight (about 7-8 hours), covered.

In the morning you will wake up to this!

The smell that I woke to was amazing! I got up extra early to finish this up and my whole apartment smelled like a warm apple pie. So nice 🙂 Even Phoebe’s little sniffer was working!

I ended up mashing mine a little, to bring the chunkiness down a level

I plan on using my apple butter to slather on Ezekiel bread or corn crisps. I probably will also throw it on top of some oatmeal, greek yogurt, or of course… straight out of the jar! 🙂

      Since it is FRESH ingredients best to use within 10-14 days! Make sure you refrigerate
