Copycat Quaker Chewy Granola Bars

These granola bars took me FIVE minutes and they are yummy and chocolate-y.

You only need five ingredients, or 6 if you substitute.

Here’s what you’ll need:

  • 2 cups old fashioned oats
  • 1/2 cup Muscle Butter (I used glazed donut flavor)
  • 1/2 cup honey
  • 1/3 cup mini dark chocolate chips
  • 1/3 cup reduced sugar dried cranberries

If you don’t have Muscle Butter you can use 1/4 cup coconut oil or butter + 1/4 cup nut butter of choice. Muscle butter is composed of coconut oil and cashew butter. The cashew really helps thicken things and keep the bar together so I highly suggest sticking with the cashew butter. It also makes a decadent granola bar!

On low to medium heat, place the Muscle butter (or nut butter concoction) and honey in a pan. Heat until it loosens up a bit, DO NOT BOIL or it’ll burn. 3 minutes should do the trick.

Mix together the oats, dried cranberries, and mini dark chocolate chips. Pour the mixture over the oat combination. If you want your mini chocolate chips whole, leave those out, let the combination cool, and then add them. I like them melted in so the whole bar tastes like chocolate!

Line a 8×8 baking dish with parchment paper and push the granola into the dish, flattening with a spatula or your hands. Refrigerate for 2 hours to set and cut into 10 equal bars. These are slightly larger so if you wanted to cut the recipe in half you could.

Macros per bar: 214.6 calories, 6.9 g fat, 34.9 g carbs (2.9 g fiber, 19.2 g sugar), 6.3 g protein

Great for a mid day snack because I’m constantly on the go at work and need some carbs!
