PB2 Poppers

These little guys are awesome treats made from one of my favorite products, PB2!

Low fat, and tastes like a truffle! WOW

They are so simple to make, and so delicious! I just can’t stop popping them!

For this recipe you will need:

-1/2 cup of PB2- peanut butter powder. (I used the kind with cocoa, but regular works too)
-1/3 cup of water
-1/2 cup of low fat graham cracker crumbs (I made my own by crushing in a freezer bag)
-2 tablespoons of oats

THAT’S IT!

Start by mixing your PB2 with water to make peanut butter. We want this a little thicker so the ratio is different. Normally with PB2 and water you do 1:1. So add less water to make it easier to form into poppers šŸ™‚

Mix this up good

It’ll look like this when mixed

Like a thick pudding

Next add your graham crackers to the bowl

Graham crackers… yum

Mix this up good

It’ll start to form a dough

Now add the oats

2 tablespoons of oats

And mix these in

Almost done

All that’s left to do is roll these into small balls or poppers!

A little larger than a quarter

You can either refrigerate these overnight or pop them in the freezer for 20 minutes and enjoy right away. I keep them on wax paper.

Makes about 15-16 poppers. Keep what you don’t eat in the fridge!

UPDATE! Nutritional info for one PB2 Popper: 42.5 calories 0.75 grams of fat, 7.9 grams of carbs, 2 grams of protein. MUCH better than a Godiva Truffle which can be 6-8 grams of fat a piece and over 120 calories.

So good for a midnight snack or after morning coffee šŸ˜‰

      Sorry, I’m not good at always calculating nutritional value because I’m not big on counting calories! But I realize other people do. I’ll do it and update! šŸ™‚

      Peg, I just plugged ingredients in for smart points and if you make 15 poppers from the recipe, each one is 1 smart point!

    Why not add some protein powder to pump up the healthy stats? Wonder what the carbs are with the graham cracker crumbs in there?

      You could certainly do that. I chose not to with this recipe to keep the calories under 50 with some carbs in there. Plus, protein powder will dry out recipes faster and make them dense, so I choose not to put it in all my recipes.

    I made these tonight. So tasty! I didn’t have a full 1/2cup of graham cracker crumbs, so I added coconut flour to make up the difference. Yum!

    Is there a good sub for the graham cracker?

      The graham cracker was used to get it a S’mores taste. Any carb will do. Ground oats, some coconut flour, you could even do ground almonds or flax meal!

    I just made these and they’re the bomb and so easy.Being in Australia we don’t have the graham crackers so i had to use digestive buscuits

    i tried this recipe, but used flax seed meal instead of graham cracker crumbs since I’m cutting carbs…but they were not good. šŸ™
