Quest Chocolate Chip Cookie Dough Blondies

Hi guys!

Here’s a recipe I came up with yesterday evening that I thought I would share šŸ™‚

You all know my love of Quest Bars. My favorite flavor of course is the cookie dough and ::spoiler alert:: the new flavor is Red Velvet Cake. Not sure how I feel about this. I don’t like red velvet cake at all, but usually when people do they are OBSESSED with the flavor. I really want a cake batter flavor, c’mon Quest!

Anyway, this recipe came about since I had extra almond butter around and I bought a huge box of the cookie dough flavor this past weekend. So easy to make and delicious!

Here’s What You’ll Need:

  • 1/4 cup coconut flour
  • 1/4 cup almond butter (I used my own of course, but store bought will do)
  • 2 eggs
  • 2 egg whites
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1/4 cup of baking stevia or a few packets of stevia in the raw
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • pinch of cinnamon

AND 2 chocolate chip cookie dough Quest Bars!

Mix all the ingredients together and chop the quest bars into chunks. Fold the chunks into the batter. Spray an 8×8 pan with cooking spray (I used coconut oil spray). Place in the oven on 375 degrees Fahrenheit for 25 minutes. The edges will start to become toasty brown.

Let cool and cut into 6-8 pieces.

If 6 pieces: an estimate of the macros– 180 calories, 10 g fat, 12 grams of carbs, 13 grams protein.

Remember fats are good fats from the almonds.

    Which stevia do you use? Some I have looked at don’t appear to be 100% stevia. Also do you use liquid stevia like the nunaturals ones? What are your thoughts on them? Thanks .Tam

      I only use stevia in the raw. The baking stevia is still the stevia in the raw brand. It’s pure stevia. Other brands like skinny girl and things like that have extra ingredients so be careful. I do buy the nunaturals liquid stevia in the vanilla flavor for coffee!

        My stevia in the raw mini packets, on its box, it says that in the ingredients it contains dextrose… thoughts? Thank you!
